Lynne was introduced to Col. Newsom's hams during an event in Louisville and says it "rivals the best hams you get in Europe." Hams are aged 8-10 months, although they do one for Louisville's Seelbach Hotel that is aged 20 months. Lynne says to ask if you can get one of those. She likes to serve it very thinly sliced, like prosciutto. Each ham comes with complete preparation instructions.
A Cocoa Splurge
Lynne carefully guards her stash of Pernigotti Cocoa, a rich Dutch processed, unsweetened cocoa with a hint of vanilla produced by a family owned company in Italy. Use it in baking or mix it with sugar and whole milk for a decadent cup of cocoa. Available at Williams-Sonoma stores and mail order.
