Celebration IPA season is a magical time at the brewery as we toast the start of the holiday season. Celebration IPA is layered with citrus and rich sweet malt notes which pair nicely with the bitterness of the chocolate and accentuates the citrus zest in the crust. The ginger adds a little punch to tie it all together.
Its November and I’m gearing up for my holiday turkey. I love a brined turkey and cooking with beer, so I combined these elements to create a juicy beer-brined turkey with a Dankful IPA gravy. Dankful IPA has piney hop aromas, so I paired that with juniper berries in the brine to accentuate those flavors.
The sweetness of the miso balances the complexity of Hazy Little Thing IPA’ s bitter notes. The apples compliment the beer’s fruit forward flavor, while the caramelization of the pork enhance its malt characters.
Glazed carrots are one of my favorite veggies. The earthy, sweet flavor balances nicely with the bright acidity of the Ginger, Lemon & Hibiscus Strainge Beast Hard Kombucha. Topped off with sliced almonds for a little crunch and you’ve got a delightful side dish to pair with a roast, chicken or turkey.
This dish is packed with bold flavors of garlic, spice, and vinegar and balanced out by the rich, creamy grits. The hint of rosemary pairs nicely with the piney hop aromas of Sierra Nevada Pale Ale. This dish is so bold it needs a smooth beer like Pale Ale to cleanse your palate between bites.
Panna cotta is a wonderfully light dessert to enjoy in the heat of summer. When you pair the smooth creamy créme fraîche pannacotta with Wild Little Thing Sour Ale strawberries, black peppercorn crumble and a hint of lemon zest it creates a delightfully complex flavor profile that’s not too sweet and slightly sour.
This is a playful twist on a classic recipe that pulls you back to childhood. I like cooking and pairing spicy, hearty dishes with Torpedo Extra IPA because the punch of the spice and sharp cheddar stand up to the hop forward, bitter notes of the beer.
The citrus notes of the oranges and grapefruit enhance the lightly sweet, floral, and bright flavors of the Passion Fruit & Blood Orange Hard Kombucha. Strainge Beast Hard Kombuchas are great additions to salad dressings and add depth to the golden beet pickle brine.
The first time I took a sip of our new Sunny Little Thing Citrus Wheat Ale I immediately thought about brunch. Sunny Little Thing is easy to drink, has a smooth mouthfeel and is citrusy and bright. It’s a perfect accompaniment to cut the rich, fatty flavors of the hollandaise and sunny side eggs and enhances the smoky flavors of the cold smoked trout. I used it as an ingredient in the hollandaise sauce in place of some of the lemon juice and the bright citrus notes really shine through.
The hard sear and slightly gamey flavors of the lamb chops pairs nicely with the big flavor and malty complexity that is Bigfoot Barley wine. The silky mouthfeel from the brown butter aioli cuts through the aroma and bitter notes of the aggressive hop profile.
