Any sausage roll is a good thing, but these are a very good thing indeed. Savory is a really old herb that was used in cooking centuries ago. We wanted to recreate a sausage roll that you might have unearthed in an ancient English recipe in some dusty old book somewhere. And we’ve used plenty of savory to bring that nice herby taste to the fore. These are great for picnics or packed lunches, eaten hot or cold.
If you make salmon on a regular basis, you know how quickly it can come together. But if you make it on a regular basis, like us, you also stop getting excited for salmon night. When I ask my husband what we should make for dinner and he says “salmon,” it almost sounds like a sigh and a shrug. Get excited, my friends, because this is the salmon recipe that will bring back the love. And if you don’t normally make salmon at home, this is a great recipe to get you started. It’s pretty foolproof.
There’s nothing new about marinating chicken with herbs and citrus, but the addition of fish sauce takes this tried-and-true technique to something seriously next level. The fish sauce works its way deep into the chicken to impart its funky, salty flavor all the way through. This recipe also shows off the special relationship between fish sauce and sugar (in this case, honey) and how they work together to create caramelization without tipping the scales of flavor into something too sweet. If you’d rather not mess with a whole chicken, feel free to swap in chicken thighs or breasts.
There’s nothing ordinary about this stunning herb-specked, grain-free tabouli. Raw cauliflower and pine nuts take center stage and combine to add an unexpected and essential nuttiness and color that elevate the dish. This recipe takes just minutes to whip up and seconds to devour. It’s crunchy, fresh, and the very definition of craveable clean food that makes you want more.
One of my all-time favorites, this sheet-pan supper has it all—spicy harissa-laced roasted chicken; sweet, browned leeks; crunchy potatoes; plus a cool garnish of salted yogurt and plenty of fresh bright herbs. It’s a little lighter than your average roasted chicken and potatoes dinner, and a lot more profoundly flavored.
The inspiration for this recipes was Pan Bagnat, the traditional Nice “sandwich,” in which the top of a round loaf would be sliced off and some of the crumb hollowed out, mixed with tuna, olives, anchovies, etc. then spooned back in and the “lid” put on top. Later variations are often made with ham and cheese, and sometimes peppers layered up neatly inside the bread “shell,” but I thought it would be fun to stuff the ingredients between the slices of a whole loaf, and bake it. We often make this for lunch. and everyone loves it warm, but it is also a great picnic showstopper. You can carry it with you, still in its foil, then just open it up, drizzle with oil and let everyone help themselves. Although I have suggested using prosciutto and mozzarella, which melts very well, I always associate pain surprise with Provence, as I like to make it when I am there on holiday with the family, but using local cured ham and cheese instead.
This Korean breakfast sandwich, often sold on the street in the morning around bus stations and universities, is filled with a vegetable and ham omelet and topped with ketchup and brown sugar.
Some Neapolitans say this dish is simplified French ratatouille, while others contend that ratatouille is complicated cianfotta. Either way, this stew is a tender medley of seasonal summer produce. While cooking cianfotta, as it’s known in the local dialect (ciambotta in Italian), you want everything to sort of steam in its own juices; you’ll need to control the heat so you don’t need to add any water. In the end, the vegetables should be very soft and almost falling apart and the flavors should all be beautifully married.
There’s nothing quite like this combo on a summer Pasta Night. Ricotta, basil, corn, and summer squash varieties. It’s good warm, but it’s really, really good at room temperature, when all the flavors have a chance to meld. So tonight’s a night when it’s okay if dinner gets cold—pour a glass of crisp rosé, set the table outside, and let everyone leisurely make their way to dinner.
When I think of Vietnamese food, it’s fresh herbs that spring to mind. The coriander (cilantro) in this dish is essential, but ideally you should get all three herbs – they’re well worth it. Life is full of choices, and so is this recipe. For instance, you can add steamed broccoli or pak choi (bok choi), or have it with noodles instead of rice.
