Q: I've tried many times to remove the skins from hazelnuts and, after a lot of work, had very little success. Help!
Lynne: It is tedious stuff. Try baking the nuts at 400 degrees until toasted (the skins usually loosen and the nuts darken slightly), about 8 to 10 minutes. Cool the nuts then rub them in a coarse towel. Between the skinning process and the fact that hazelnuts turn stale very quickly (and taste awful when they do), I rarely use them these days. But they're great when you can get very fresh ones.
