Equipment expert Dorie Greenspan had an epiphany of sorts when she started checking out juicers. We now picture her happily juicing just about anything. When shopping for an electric juicer, there are two styles to check out: centrifugal and masticating. Here are some tips from Dorie on what to look for.
Centrifugal Juicers: Most juicers fall into this category. The juice is extracted from the pulp and pours out of the machine's spout. What happens to the remaining pulp depends on the model. Check to make sure the juicer easy to clean (or you won't use it), that the motor is strong enough, and that the machine won't vibrate and wander around your counter. The best-known brands are Acme, Omega, Juiceman, JuiceLady, and Miracle.
Masticating Juicers: The Champion brand is Dorie's favorite and it's different from all others. It's pricey at about $200, it's huge, and it's not very attractive, but it's a breeze to clean and juices everything from greens to whole citrus fruits. Dorie makes lemonade from whole lemons all summer long, as well as nut butters and sorbet from frozen fruits.
