    Ingredients
     

  • Corn Chip Strips

    These corn chips are almost as simple, but have a slightly more complex flavor.

    This rich soup is healthy, vegan and quick to prepare.

  • Corn Salad with Tomatoes, Avocadoes, and Lime Cilantro Dressing

    Even more so than corn on the cob swabbed with butter, when summer comes, I look forward to sweet, nubby corn salads loaded with vegetables and a zesty dressing.

  • Cantaloupe Salad with Thai Basil and Chile

    Note: Have everything cut and ready, but mix just before serving.

  • Spring Garden Hodgepodge

    Ingredients

  • Cauliflower with Saffron and Pasta

    Steam the cauliflower florets and core over boiling water for about 3 minutes. Taste a piece. It should be on the verge of tenderness and not quite fully cooked. Set it aside.

  • Pico de Gallo Salsa

    The salsa can be prepared up to 12 hours ahead of time, covered and refrigerated. And it can be eaten with anything you want to try it with!
